Yes, those pesky weeds you find all over your lawn are actually bursting with nutrients! Dandelion greens are an excellent source of beta-carotene, vitamin C, fiber, potassium, iron, calcium, magnesium, zinc and phosphorus among other things. The roots are equally as beneficial and can help improve digestion, relieve constipation and soothe an upset stomach. Dandelions are also a liver tonic that detoxify the liver and ease congestion in the liver. They help purify the bladder and kidneys and reduce the risk of urinary tract infections.

Caffeine stimulates the adrenals which can cause adrenal fatigue. It is also a diuretic which means it releases water and causes dehydration. Dandelion root has mild diuretic properties; however its potassium content maintains balanced electrolyte levels. Iced Dandelion Vanilla Latte Recipes

(sugar free, caffeine free, vegan, paleo, gluten free)

Prep time: 5 minutes

Inactive prep time: overnight

Serving size: 8 cups

Ingredients:

  1. Boil 8 cups of water and steep 2 bags of roasted dandelion root tea in the hot water. This can be done in a pot on the stove or with a kettle and a large tea pot.
  2. After the tea has steeped for 15 minutes, pour 1 cup of tea into an ice cube tray and place it in the freezer overnight. Let the remaining tea come to room temperature and place in the fridge covered to cool for at least 2 hours.
  3. Once the tea has cooled, remove the roasted dandelion root tea bags and pour it into a serving pitcher. Add the organic soy milk, stevia to taste, vanilla and dandelion root tea ice cubes.
  4. Serve Iced Dandelion Vanilla Latte with a sprinkle of cinnamon and enjoy.

Note: I like to make the ice cubes out of the tea so as they melt the Iced Dandelion Vanilla Latte doesn’t become watered down. You could also enjoy this latte hot by adding the organic soy milk, stevia and vanilla after the tea has steeped for at least 15 minutes.

  • 10-15 drops of stevia
  • 1/2 tsp vanilla extract
  • Sprinkle of cinnamon
