I have been making this Savoury Watermelon Salad for so long I’m so excited to finally share the recipe with you! When most people think watermelon, they think sweet fruit salad, right? But why not take this delicious hydrating fruit to a new level by introducing it into the savoury game!

Mint is one of my favourite herbs. It is really easy to grow and tends to grow like a weed in the summer so there is always an abundance! What I love most about mint is the awesome health benefits.

  • Mint is your one-stop-shop for tummy troubles: it aids digestion because it helps activate our digestive enzymes and soothes the stomach in the event of indigestion or inflammation!
  • Mint is a natural stimulant which can help fight fatigue, anxiety, and depression when used frequently.
  • Eating mint regularly can help promote weight loss. Remember those digestive enzymes that it activates? Well it also helps your body absorb nutrients more quickly and burn food as energy! This is especially true with fat digestion – mint will help you turn that avocado into energy STAT.

Savoury Watermelon Salad Recipe

(gluten-free, vegan, nut-free, paleo, sugar-free)

Prep time: 10 minutes | Serves 4

Ingredients

  • ½ large watermelon, diced into bite sized pieces (10 cups)
  • Juice of one lime
  • 2 Tbsp fresh mint, chopped
  • Salt and pepper to taste

Directions:

  1. Place all ingredients in a bowl and toss until mixed.

NOTE: If serving at a later time, add all ingredients except for the salt. If you add the salt and let the Savoury Watermelon Salad sit for over 6 hours, it will slowly draw the water out of the watermelon. Add the salt right before serving.
