Like most of us, peanut butter and jelly sandwiches will always hold a special place in my childhood memories (and tummy!) so I decided to create a Healthy PB&J Smoothie! Peanut butter and jelly sandwiches are the perfect combination of salty and sweet, such an easy and satisfying lunch, and are such a hit with kids.

Unfortunately, the sandwiches we used to eat made out of white bread and super processed peanut butter are not the best kid-friendly fuel. I’ve created this creamy healthy PB&J smoothie that is sure to satisfy all your kid’s needs (and mom and dad too!) without sacrificing nutrition. It even contains chia seeds for extra protein and fiber making it the perfect lunch!

Health Benefits of Peanuts

Often peanuts get a bad rep for being an “allergen” but for those of us that can enjoy these yummy little legumes, they also have some pretty fantastic health benefits!

  • Peanuts are an awesome source of healthy fats. Few people know this but they contain the same type of fat (oleic acid) as olive oil! This type of fat is what makes the Mediterranean diet so successful for heart health and reduced risk for cardiovascular disease!
  • Peanuts are high in antioxidants (even rivaling some fruits). Antioxidants help slow down ageing, help fight off cancer cells and are awesome for eyesight.
  • Niacin is a super important nutrient for maintaining brain-health. Peanuts have so much niacin, that studies have shown people who consume 22mg of the nutrient per day were 70% less likely to develop Alzheimers.
  • Eating peanuts among other nuts can help control weight and prevent weight gain.

Healthy PB&J Smoothie Recipe

(vegan, gluten-free, sugar-free)

Ingredients

  • 1 cup almond milk
  • 1.5 cup strawberries
  • 1 cup steamed cauliflower, frozen
  • 2 Tbsp peanut butter
  • 1 Tbsp chia seeds
  • 4 ice cubes *if strawberries are fresh and not frozen

Directions:

  1. Blend and enjoy!
