Gooey Gingerbread Protein Balls Recipe

(raw vegan, gluten free)

Prep time: 15 minutes | Inactive prep: 2 hours | Serving size: 16

Ingredients

  • 10 Medjool dates
  • 2 Tbsp blackstrap molasses
  • 1 Tbsp coconut oil, melted
  • 2 Tbsp fresh grated ginger
  • 1 cup walnuts, finely chopped
  • 1-2 scoop protein powder
  • 2 tsp cinnamon
  • 1 tsp vanilla
  • ½ tsp cloves
  • 1/8 tsp white pepper
  • 1/8 tsp nutmeg

Directions

  1. Place the Medjool dates, coconut oil and molasses to in a food processor and blend until fairly smooth. If the dates are dry, add 1 Tbsp of water.
  2. Add remaining ingredients and pulse until mixed, stopping to scrape down the sides when required.
  3. Form the mixture into Gooey Gingerbread Protein Balls with very wet hand because the dough is super sticky. Balls should be roughly 2 cm diameter, and place in the freezer to set and to store.
