Roasted Curry Cauliflower is something I like to make when I’m looking for a quick and delicious side dish. It is ready in less than 30 minutes and is bursting with earthy and bright curry flavour. Roasted Curry Cauliflower is also gluten free, vegan and paleo!

I love curry because it always tastes different depending on the blend you buy. You can get spicy curry that wakes up your taste buds and mild curry that provides a flavour explosion. For this recipe I used the Jamaican Curry I got from Spice Post which is a blend that incorporates the traditional Caribbean flavours with traditional curry spices from India.

Health Benefits of Cauliflower

Cauliflower is a versatile veggie that has a really mild taste. It is available year round and offers lots of health benefits including:

  • Boosting Phase 1 and 2 detoxification
  • Lowering the risk of oxidative stress in our cells due its broad spectrum of antioxidants
  • Being packed with immune booting vitamin C
  • Containing lots of vitamin K that offers anti-inflammatory properties

Roasted Curry Cauliflower Recipe

(gluten free, vegan, paleo)

Prep time: 5 mintues | Cook time: 20 minutes | Serving size: 4 sides

Ingredients:

  • 1 head cauliflower cut into bite sized pieces (roughly 4 cups)
  • 2 Tbsp coconut oil, melted
  • 1 Tbsp lemon juice
  • 1 Tbsp curry powder
  • ¼ tsp salt

Directions:

  1. Preheat the oven to 450F.
  2. Place all Roasted Curry Cauliflower ingredients in big bowl and toss to coat evenly.
  3. Spread the curry cauliflower evenly on a baking sheet and bake for 20 minutes.
