Dill Pickle Crispy Chickpeas

Ingredients:

  • 19 oz can chickpeas (about 2 cups)
  • 2 tbsp oil
  • 2 tbsp fresh dill, diced
  • 1/2 tsp garlic powder
  • 1/2 tsp mustard powder
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 tbsp pickle juice

Directions:

  1. Preheat your oven to 400°F and line a baking sheet with parchment paper, a silicone sheet, or grease it with oil.
  2. Drain and rinse the chickpeas, then pat them dry with a tea towel. The drier they are, the crispier they will become.
  3. Toss the chickpeas in oil, dill, garlic powder, mustard powder, salt, and pepper until evenly coated.
  4. Spread the chickpeas out on the baking sheet and bake for 30-40 minutes, stirring every 10 minutes, until they turn golden brown.
  5. Drizzle the pickle juice over the chickpeas, toss to coat, and bake for an additional minute.
