Protein Sandwich Waffles Recipe (gluten-free, vegetarian, nut-free)
Prep time: 5 minutes | Cooking time: 10 minutes | Makes 4 depending on the size of your waffle maker
Ingredients:
- 1 ¼ cup quinoa
- 3 eggs
- 1 banana
- 2 tsp baking powder
- 1 tbsp avocado oil
- ¼ cup plain Greek yogurt
Directions:
- Place quinoa in a food processor and blend until you reach a flour-like consistency. Pour it into a bowl and set aside.
- Place everything in a high-speed blender and blend until smooth. Add the quinoa flour and blend until smooth.
- Pour ½ cup (depending on the size of your waffle maker) into a waffle iron and cook until the light turns green. I like to cook them on the 4 setting.
- Enjoy as a high-protein alternative to bread.
