Savoury Mushroom Spinach Breakfast Hash with Fried Eggs is one of my favourite breakfasts. It is super filling and makes a weekday feel like the weekend. If you don’t have 60 minutes in the morning (who does?!), you can make this in advance and simply heat it up in a frying pan in the morning, then top with a fried egg!

Savoury Mushroom Spinach Breakfast Hash with Fried Eggs Recipe

Serves: 2 | Hands-On Time: 15 Minutes | Cook Time: 40 Minutes | Total Time: 55 Minutes
Ingredients
- 3 cups baby potatoes (0.75 lbs), cut into eight
- 1 onion, diced
- 1 cup cremini mushrooms, sliced
- 2 tbsp avocado oil, divided
- 1 garlic clove, minced
- ½ tsp oregano
- ¼ tsp salt
- ¼ tsp pepper
- 2 cups baby spinach
- 4 eggs
- ¼ cup hemp seeds
- 2 tbsp fresh parsley, chopped
Directions
- Preheat oven to 350F and line a baking sheet with parchment paper.
- Place potatoes, onion and mushrooms in a large bowl and toss with half of the avocado oil, garlic, oregano, salt, and pepper.
- Spread potatoes on the baking sheet and bake for 35 minutes. Add spinach, and bake for an additional 5 minutes until wilted.
- Before serving, fry two eggs by adding half of the avocado oil to a pan and heat to medium heat. Break the eggs into the pan and cook until the whites are set 3 minutes. If you like over-easy eggs, flip and cook for an additional 30 seconds.
- Place one serving of Savoury Mushroom Spinach Breakfast Hash in a bowl, top with two fried eggs, half of the hemp seeds and a sprinkle of parsley.
