These Oatmeal Chocolate Chip Muffins are a family favourite in our house and are a staple in my baking. I felt like it was finally time to share this delicious and nutritious recipe with you! These muffins contain tons of fiber from oats, spelt flour, and hemp seeds. They also have anti-inflammatory cinnamon, mineral-rich almond milk (make your own for extra goodness), and brain-boosting coconut oil. Of course, you’ll also find your favourite familiar flavours thanks to vanilla extract and chocolate chips. I’ve listed measurements for those but feel free to measure with your heart too.

Oatmeal Chocolate Chip Muffins Recipe

Dairy-free

Prep time: 15 min | Cook time: 15-22 min | Serving size: 12 medium/small muffins

Ingredients:

  • 1 ¼ cups spelt flour
  • 1 cup oats
  • ¾ cup cane sugar
  • ¼ cup hemp seeds
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp baking soda
  • 1 pinch of salt    
  • 1 cup almond milk (or your favourite milk alternative)
  • 1 egg
  • ¼ cup melted coconut oil
  • 1 tsp vanilla extract 
  • 1/2 cup mini chocolate chips

Directions:

  1. Preheat the oven to 375F and line a muffin tin with silicone liners.
  2. In a large bowl, mix together the flour, oats, cane sugar, hemp seeds, baking powder, cinnamon, baking soda and salt. 
  3. In a medium bowl, whisk together the milk, an egg, melted coconut oil, and vanilla extract.
  4. Pour the wet ingredients into the dry and stir until just mixed. Fold in the chocolate chips.
  5. Spoon the chocolate chip oatmeal muffin batter into 12 muffin liners until ¾ full and bake for 20 minutes or until a toothpick inserted in the center comes out clean.

Have you ever tried spelt flour before? It’s a type of flour made from the ancient grain spelt. Many people prefer spelt over regular wheat flour since it contains more health benefits and has a yummy nutty flavour. And although it’s not totally gluten-free, there are tons of ways that spelt actually promotes good health!

Firstly, spelt could be considered easier to digest than all-purpose baking flour. This might be because it contains more fiber than regular flour. This makes it a good choice for those who aren’t allergic or super sensitive to gluten but want to choose a more gut-friendly option for baking. 

Spelt flour also contains more protein and vitamin B2 than all-purpose flour. It’s a great source of manganese, which is important for healthy joints. It also contains antioxidants that can help fight free radicals in the body.

Spelt is a great option as well for those who are monitoring their blood sugar since it contains extra fiber and has a lower glycemic response than regular flour. This means it is less likely to spike your blood sugar!

Hemp Seeds are such an awesome nutritional ingredient! I love using them in everything from salad dressings, to smoothie bowls, to baking. These little seeds pack a huge nutritional punch! 

Hemp seeds are a great source of protein, we’re talking roughly 10g in only 3 tablespoons! They also contain all nine essential amino acids making them a complete protein, and an excellent choice for anyone who follows a vegan or vegetarian diet. 

Hemp seeds are also high in healthy fats, like omega-3 and omega-6 fatty acids, which are important for improving brain function, reducing inflammation, and promoting heart health. They contain tons of healthy fiber to promote good digestion, and are packed with vitamins and minerals too!

Lemon Poppy Seed Bites are one of my absolute favourite grab-and-go snacks. You can make a triple batch and store them in the freezer for easy access when hunger strikes. They are also a great mood and energy booster! These bites contain nuts and seeds like walnuts and chia seeds which are high in protein, healthy fat, and fiber. They also contain tryptophan which is an amino acid that produces serotonin (the happy chemical), and omega-3 fats which have been shown to improve mood. These bites will have you feeling like a big ball of sunshine!

Chocolate Zucchini Muffins

If you’re a chocolate lover, I’ve got you covered! Chocolate can actually be super healthy if you are eating it the right way. It contains phenylethylamine (PEA), which is a chemical known to inspire happiness, clear-mindedness, focus, and wakefulness. Zucchini is high in mood-boosting folate, fiber, vitamin B6, and vitamin C. These muffins are sweetened with honey and packed with healthy fat from coconut oil and walnuts!
