Creamy Vegan Dill Dip Recipe
gluten-free & dairy-free
Ingredients
- 1 cup cashews, soaked overnight
- ½ cup water
- 2 tbsp pickle juice
- 1 tbsp lemon juice
- ¼ cup nutritional yeast
- ¼ cup fresh dill
- 1 tbsp dried minced onion
- ½ tbsp garlic powder
- Salt and pepper to taste
Directions
- Soak the cashews overnight so they are soft and blend easily. You can’t really skip this step, but if you do, try soaking them in boiling water for 2 hours.
- Place everything in a food processor and blend until smooth.
- Enjoy dipping veggies or your favourite seed cracker in this creamy vegan dill dip.
NOTE: if you don’t have pickles in the fridge (they are a staple in my house, I’m obsessed!) use lemon juice.
