Pumpkin Waffle Recipe – Make Ahead Breakfast for Busy Mornings

There is something about October that makes me want to add pumpkin spice to literally everything. I went through a whole bottle of pumpkin spice last year… seriously! I’m obsessed. The cooler mornings, cozy sweaters, colourful leaves, and of course, all the pumpkin recipes make fall one of my favourite times of year. These pumpkin waffles are the perfect way to bring some of those cozy fall flavours into your breakfast routine. 

My Pumpkin Waffles are naturally sweetened with ripe bananas and Medjool dates, made with almond butter and almond flour, and packed with pumpkin puree and warm pumpkin spice. The result is a soft, fluffy waffle with just the right amount of sweetness.

I love making this recipe on a slow fall morning with a warm cup of tea, but they are also a great option for busy weekdays. Since this month is all about Make Ahead Breakfast Recipes, you can make a batch on the weekend and have breakfast ready to go when you need it. Simply warm them up in the toaster and add your favourite toppings for an easy breakfast that feels a little more special than your usual weekday meal.

And if you do not have a waffle iron, do not worry. This same batter can be used to make pancakes!

Pumpkin Waffles Recipe

Nut-free

Prep time: | Cook time: | Serving size: 9 waffles

Ingredients

  • 2 cups spelt flour
  • 2 tbsp coconut sugar
  • 1 tbsp baking powder
  • 1 tsp pumpkin spice
  • ½ tsp salt
  • 1¾ cup almond milk or milk of choice
  • 6 tbsp melted coconut oil
  • 2 eggs
  • ½ cup pumpkin puree
  • 1 tsp vanilla

Directions

  1. Mix all of the dry ingredients together in a large bowl.
  2. Whisk the wet ingredients in a medium bowl.
  3. Add the wet ingredients to the dry ingredeints and whisk until smooth. Set aside to rest for 5 minutes.
  4. Preheat your waffle iron to medium-high heat; I use setting 4 out of 5 for crispy waffles.
  5. Ladle ½ cup mixture into the waffle iron, and cook until the ready indicator comes on. Makes approximately 9 waffles. 
  6. Top with Greek yogurt, pumpkin seeds and drizzle with maple syrup. 

If you do not have a waffle iron, you can use the same batter to make pancakes. Simply cook the pancakes in a lightly greased pan over medium heat until golden and cooked through.

Pumpkin pie filling usually contains added sugar and spices, while pure pumpkin gives you the flexibility to flavour your recipe yourself.

Make These Pumpkin Waffles Ahead

If mornings tend to feel rushed, this is a great recipe to make ahead. Rather than making breakfast from scratch every morning, prepare a batch when you have a little more time. Once they have cooled, store them in the fridge for the next few days or freeze them so you have an easy breakfast ready whenever you need it. When you are ready to eat, simply warm them up and add your favourite toppings.

This is one of my favourite ways to make healthy eating feel more manageable. Having something nourishing already made can take one decision off your plate when you are trying to get out the door.

And because these pumpkin waffles are just as delicious with different toppings, you can switch things up throughout the week. Try banana and pecans one morning, berries and yogurt another day, or keep it simple with a little maple syrup.
