Ingredients

  •       4 small boneless pork chops, roughly 2cm thick
  •       Salt and pepper to taste
  •       3 tbsp avocado oil
  •       1 cup cherry tomatoes, sliced
  •       ¼ cup capers
  •       2 garlic cloves, minced
  •       2 tbsp balsamic vinegar

Directions

  1. Season both sides of the pork chops with salt and pepper.
  2. Heat 2 tbsp oil in a cast-iron pan over medium heat. Add pork chops and cook for 3-5 minutes per side until internal temperature is 160F. Once the pork chops are cooked, remove them from the pan and set aside to rest.
  3.  Place the remaining 1 tbsp of olive oil in the pan and add the tomatoes, capers and garlic and cook for 2 minutes. Add the balsamic vinegar and cook for an additional 1 minute.
  4. Place the pork chops on the plates, top with the tomato sauce and serve with a salad.
