Tofu Bowl with Thai Peanut Sauce Recipe

Prep time: 15 minutes | Cook time: 20 minutes | Serving size: 4

Tofu Bowl Ingredients

1 cup rice

2 tbsp coconut oil

1 package of extra-firm organic tofu

2 carrots, diced

½ cucumber, diced

½ mango, diced

¼ red cabbage, diced

¼ cup roasted peanuts

2 tbsp fresh mint, chillfonade

2 tbsp fresh Thai basil, chillonade

Thai Peanut Sauce Recipe

1/2 cup creamy organic peanut butter at room temperature

2 tbsp tamari

1 tbsp rice vinegar

2 tbsp sesame oil

1/4 tsp cayenne pepper

Directions

  1. Rinse the rice and cook according to the package instructions.
  2. Heat 2 tablespoons of coconut oil in a large pan over medium heat. Drain the tofu and cut it into 1.5 cm cubes. Add the tofu to the pan and sauté for approximately 20 minutes, turning occasionally, until golden and crispy on all sides. Remove from the pan and set aside.
  3. While the tofu is cooking, prepare the vegetables and make the sauce.
  4. To make the Thai Peanut Sauce, add peanut butter, tamari, rice vinegar, sesame oil, and cayenne pepper to a small bowl. Mix until smooth and creamy.
  5. To assemble the bowls, add rice to each bowl and top with tofu, carrots, cucumber, mango, red cabbage, fresh herbs, and roasted peanuts. Drizzle with Thai Peanut Sauce and enjoy.
