I adore peaches, from their weird furry skin to their sweet juicy centers. Peaches are generally in season from July to September so I always stock up while I can because they have lots of amazing health benefits.

Summer Pea Peach Salad Recipe

(gluten-free, dairy-free, vegetarian, nut-free)

Prep time: 10 minutes | Serving size: 3 meal servings or 6 sides

Ingredients

  • 5oz mixed greens
  • 2 diced ripe peaches
  • 2 cups of fresh sweet peas, pods removed
  • 1 avocado, diced
  • 1 cup sunflower seeds

Dressing

  • 1/4 minced shallot (2 teaspoons)
  • 1/4 cup apple cider vinegar
  • 1 tablespoon honey
  • 1/2 teaspoon Dijon mustard
  • 1/2 cup olive oil
  • Salt and fresh ground black pepper

Directions

  1. Mix dressing ingredients together in a jar or blender. Set aside until ready to use, or store sealed in the refrigerator for up to 1 week.
  2. To make the salad, in a large bowl, combine the mixed greens, peaches, sweet peas, avocado, and sunflower seeds.
  3. Drizzle about 1/2 cup of the vinaigrette into the bowl and toss the salad gently but thoroughly to combine, then serve immediately.
