Hummus and Veggie Sandwich Recipe

vegan & nut-free

Prep time: 5 minutes | Serving size: 1

Ingredients

  • 2 big slices of sourdough bread
  • ½ cup hummus
  • ½ a large tomato sliced
  • 1-inch cucumber cut into slices
  • ½ cup baby spinach
  • ½ avocado
  • 1 cup carrot sticks

Directions

  1. Slather ¼ cup hummus on both slices of bread. Top with cucumber, tomato, spinach and avocado.
  2. Enjoy this hummus and veggie sandwich with a side of carrot sticks and hummus.
