Hasselback Sweet Potatoes with Roasted Garlic Sauce

Hasselback Sweet Potatoes with Roasted Garlic Sauce

Gluten-free | Vegetarian

Serves: 4 | Hands-On Time: 15 Minutes | Cook Time: 1 Hour 20 Minutes | Total Time: 1.5 Hours

Ingredients

  • 4 sweet potatoes that are roughly the same size
  • ¼ cup butter
  • 1 garlic clove
  • 1 tbsp olive oil
  • ½ tsp salt, divided
  • ¼ cup tahini
  • 2 tbsp water
  • 1 tbsp lemon juice
  • Parsley
  • Pepper to garnish

Directions

  1. Preheat the oven to 425 F and line a baking sheet with parchment paper. 
  2. Wash and scrub potatoes and dry them with a cloth. 
  3. Place between two chopsticks (ideally disposable chopsticks so you don’t wreck your good ones) and make ⅛ inch slices that stop ½ inch from the base. 
  4. Melt ¼ cup of butter. Brush 2 tbsp over sweet potatoes and save the rest
  5. Trim the top off a garlic clove and sprinkle olive oil and ¼ tsp salt. Wrap in foil and bake with the Hasselback sweet potatoes. 
  6. Bake everything for 30 minutes. 
  7. Remove the hasselback sweet potatoes from the oven and brush with the remaining butter, making sure it gets in between the slices. 
  8. Return to the oven and bake for an additional 30-40 minutes until the outside is crispy and the inside is soft. 
  9. Make the roasted garlic sauce by popping the garlic out of the husk. Blend with tahini, water, lemon and salt. 
  10. Served the Hasselback sweet potatoes drizzled in roasted garlic sauce, freshly ground pepper and parsley.

NOTE: for a vegan version, swap butter for olive oil.
