Garlic Scape Pesto Roasted Potatoes are golden and crispy with a punch of flavor from the Vegan Garlic Scape Pesto. They are the perfect gluten free and nut free side to any dish. Have you seen garlic scapes in your CSA or at the farmer’s market? They are the soft green stems tipped with unopened flowers that grow out of hard-neck garlic. Garlic scapes are harvested early summer and mid fall, before the flowers open, to allow the plant to focus on the garlic bulb rather than pollination. They have a mild garlic flavor and a slight sweetness making them delicious in pesto, salmon cakes, stir fries and even raw in salads! Garlic Scapes contain components that reoxygenate the blood and maintain healthy tissues and organs. They also contain allium compounds that inhibit the enzymes responsible for breaking down bones, thus helping prevent osteoarthritis.
Garlic Scape Pesto Roasted Potatoes Recipe
(vegan, gluten free, nut free)
Prep time: 15 minutes | Cook time: 35 minutes | Serving size: 4 sides
Ingredients:
- 2 Tbsp grapeseed oil
- 6 cups organic baby potatoes, washed and cut into quarters
Vegan Garlic Scape Pesto
- 6 garlic scapes, chopped
- ¼ cup olive oil
- 1 lemon juice, juiced
- 1 Tbsp hemp seeds
- 1 Tbsp nutritional yeast
- Salt and pepper to taste
Directions:
- Preheat the oven to 350F and line a baking sheet with parchment paper.
- Toss the potatoes in the grapeseed oil and spread evenly on the lined baking sheet. Place in the oven and cook for 15 minutes.
- While the potatoes are cooking, make the garlic scape pesto by placing the garlic scapes in a food processor and pulsing until minced. Add the olive oil, lemon juice, hemp seeds and nutritional yeast and pulse until mixed. Add salt and pepper to taste.
- Remove the potatoes from the oven pour the pesto over the potatoes. Toss the potatoes in the Vegan Garlic Scape Pesto and return to the oven to cook for an additional 15 to 25 minutes, until the Garlic Scape Pesto Roasted Potatoes are golden and cooked through.

I also totally love eating potatoes. They are a very high source of potassium and Americans get too much sodium and not enough potassium. Do you know what that causes? High blood pressure. Half or 50% of all Americans over age 60 have high blood pressure. That rate rises as age rises. There are places in the world where only 1% of the people have high blood pressure. In those places the potassium to sodium ratio in diet is over 5 to 1. This is what all unprocessed foods give you.
The processed foods have more sodium than potassium in them due to added salt. I would not mind living on a desert island with you eating potatoes every day. They did experiments with a few people where they ate only potatoes and margarine for over 300 days and they had no health problems.
