Parfaits are one of the easiest grab-and-go breakfasts around! Unfortunately, the refined sugar and dairy laden ones you normally see at cafes can give these breakfast powerhouses a bad reputation. I’ve come up with a recipe for these delicious and healthy Chia Blueberry Parfaits which gives you the same convenience without sacrificing nutrients or health. These Chia Blueberry Parfaits are super low in sugar, high in fiber and above all – fresh!

If you haven’t already heard of chia seeds, they are an absolute superfood! They deliver a ton of fiber and healthy fat and when added to liquid, expand in size to form a gel-like texture perfect for thickening smoothies or parfaits like this one.

Chia Blueberry Parfaits

(vegan, gluten-free, dairy-free)

Prep time: 5 minutes | Inactive prep time: 2 hours | Serving size: 4

Ingredients

Directions

  1. Place the almond milk, chia seeds and stevia in a glass container and whisk until well mixed. Place in the fridge to gel for at least 2 hours to overnight.
  2. Make a ¼ batch of Healthy Homemade Granola.
  3. Once the chia pudding has gelled, assemble the Chia Blueberry Parfaits. Start with a layer of granola followed by a layer of blueberries then chia pudding.  Repeat the same layers again and serve.

  • 2 cups almond milk
  • ½ cup chia seeds
  • 30 drops vanilla stevia
  • 2 cups Healthy Homemade Granola
  • 2 cups fresh blueberries
