Apple Cinnamon Muffins

Apple Cinnamon Muffins are the perfect breakfast for a crisp fall morning. The sweet fall apples are the star of these muffins and the cinnamon gives them a comforting warmth. They are made with nutty spelt flour, sweetened with honey and they are vegan!

Apple Cinnamon Muffins

(vegan, nut free)

Prep time: 15 minutes | Inactive prep time: 5 minutes | Cook time: 20 minutes | Serving size: 12

Ingredients:

  • 2 Tbsp ground chia seeds
  • 6 Tbsp warm water
  • 2 cups spelt flour
  • 1 Tbsp cinnamon
  • ½ tsp baking soda
  • ½ tsp Himalayan rock salt
  • ¼ cup honey
  • ¼ cup coconut oil, melted
  • 1 tsp vanilla
  • 1 banana, mashed
  • 2 small apples, finely diced

Crumble Topping:

Directions:

  1. Preheat the oven to 350F and grease a muffin pan or line it with muffin cups.
  2. In a medium bowl mix together ground chia seeds and water to make a chia egg. Let sit for 5 minutes to congeal.
  3. In a large bowl mix together spelt flour, cinnamon, baking soda and salt.
  4. Once the chia eggs become gel like, add the honey, coconut oil, vanilla and mashed banana and stir until mixed.
  5. Add the wet ingredients to the dry ingredients and stir until almost combined. Fold in the apples and mix until combined.
  6. In a medium bowl mix together the topping ingredients to form a crumbly mixture.
  7. Evenly spoon the dough into the muffin pan and top it with the crumble topping.
  8. Bake the apple cinnamon muffins for 20 minutes or until a tooth pick inserted in the centre of the muffins comes out clean.

  • TOPPING
  • ¼ cup soft coconut oil
  • ¼ cup coconut sugar
  • ⅙ cup spelt flour
  • ½ cup oats
  • ¼ tsp salt
  • ½ tsp cinnamon

  2. In a medium bowl mix together ground chia seeds and water to make a chia egg. Let sit for 5 minutes to congeal.

    for your apple cinnamon muffins can you use a gluten free flour blend such as Bob”s red mill

      Hi Teresa, I haven’t tried it but I imagine it will work! If you are worried about it holding together you can also substitute 2 Tbsp ground chia seeds + 6 Tbsp warm water for 2 eggs.

      I would love to see how it turns out for you.
