Stack’em High Spelt Pancakes
It’s so quick and easy to make these fluffy spelt pancakes you will never make pancakes out of the box again! Have you heard of spelt flour? It is flour made from an ancient grain that is easier to digest than regular white or whole wheat flour. Spelt four contains more protein and vitamin B2 than whole wheat flour and gives the stacked pancakes a yummy nutty flavour. I like to stack’em and play around with the layers, that way everyone can enjoy their own unique spelt pancake stack creation!
Stack’em High Spelt Pancakes
(vegetarian, nightshade free)
Prep time: 5 minutes
Inactive prep time: 15 minutes
Cook time: 7 minutes per batch
Serving size: 6-8 pancakes
Ingredients:
- 1 cup + 3 Tbsp spelt flour
- 2 tsp baking powder
- 1/4 tsp baking soda
- 1 Tbsp coconut sugar
- Sprinkle of cinnamon
- 1 cup almond milk
- 1 egg
- 1 tsp vanilla
- 1 Tbsp coconut oil for the pan
Layers:
- 2 bananas, walnuts and maple syrup
- 2 cups of berries and vanilla Greek yogurt
- 2 apples, almond butter and honey
- Your very own creations!
Directions:
- Mix the spelt flour, baking powder, baking soda, coconut sugar and cinnamon in a bowl. Add the almond milk, egg and vanilla and stir until combined; do not over-mix.
- Place the bowl in the fridge for 15 minutes to set the batter.
- Place 1/2 Tbsp coconut oil in the pan and heat to medium heat. Use 1/4 cup of the batter for each pancake and cook in batches, adding additional oil as required. Cook the spelt pancakes for a total of 7 minutes; flipping after roughly 5 minutes when the top is bubbly and the bottom is golden brown.
- Serve your spelt pancakes hot with maple syrup or stack’em high with the layer of your choice or your very own creation.
