It was such a pleasure to visit my Breakfast Television fam on June 7, 2023, to share my mood-boosting blueberry recipes and explain the health benefits of blueberries. I love having the opportunity to participate in these segments because it is always super fun, AND I just love to educate people on the joys of healthy eating!

Health Benefits of Blueberries
The segment was all about BLUEBERRIES, one of my absolute favourite superfoods. Blueberry season starts in July, so you definitely want to grab these recipes to make it most of it when it comes!
Blueberries are jam-packed with phytonutrients that act as both an anti-inflammatory and antioxidant. Antioxidants are essential to neutralizing cancer-causing free radicals and reversing the effects of sun damage. Studies have also shown that daily blueberry consumption can help improve memory function. Blueberries are excellent for the cardiovascular system because they improve blood fat balances by reducing total cholesterol and supporting healthy blood pressure. Blueberries can help regulate blood sugar levels because they have a low glycemic index and are high in fibre.

Mood-Boosing Blueberry Quinoa Salad
Blueberry Quinoa Salad will fill your tummy and boost your mood. The star of this recipe is the blueberries that are on the salad and in the dressing. Blueberries, and berries in general, are jam-packed with phytonutrients that act as both an anti-inflammatory and antioxidant. They may help manage the inflammation associated with depression. The flavonoids in blueberries can improve your mood. Walnuts, dark leafy greens, and quinoa can all boost your mood too.
Blueberry Lemon Meringue Roulade
Blueberry Lemon Meringue Roulade is a delicious light and fluffy dessert that is the perfect combination of tart and sweet. It is sweetened with natural sugar substitutes and is gluten-free and grain-free. Blueberry Lemon Meringue Roulade looks like a super fancy dessert, but it is actually super easy to make and is sure to impress your guests.
Blueberry Oatmeal Muffins
These muffins contain tons of fibre from oats, spelt flour, and hemp seeds. They also have anti-inflammatory cinnamon, mineral-rich almond milk, and brain-boosting coconut oil. Of course, you’ll also find lots of blueberries!
The recipe is exclusive to my Beautiful Blueberries Team-Building Virtual Cooking Class but it is adapted from my Oatmeal Chocolate Chip Muffins (swap blueberries for chocolate chips) and I added the topping from my Apple Cinnamon Muffins.

I also like to add protein powder to make it more filling and chia seeds for added fibre and blood sugar regulation.

I created my Vegan Blueberry Ice Cream Recipe because I wanted to enjoy ice cream that is actually healthy! I just love cooling down with ice cream on hot sunny days, but regular ice cream is loaded with dairy, artificial flavouring, thickeners and tons of sugar.
Raw Blueberry Cheesecake
I love making raw cheesecakes in the summer and this Raw Blueberry Cheesecake is one of my favourites. It is made with a chewy gluten-free date and pecan base that is topped with creamy vegan blueberry cashew cream cheese that tastes just like the real thing.
