Vegetarian Rainbow Bowl Recipe

June is a special month as we celebrate Pride and the vibrant spectrum of the LGBTQ+ community. What better way to honour this than with a meal that’s as colourful and diverse as the community itself? This Vegetarian Rainbow Bowl is not only a feast for the eyes but also packed with nutrients to boost your mood and energy. This bowl features a medley of red tomatoes, orange carrots, sweet potato, and green zucchini, making it a perfect addition to your summer meal rotation.

Vegetarian Rainbow Bowl

Vegetarian | Dairy-free

Prep time:  15 minutes | Cook time: 40 minutes | Serving size: 4

Vegetarian Rainbow Bowl Ingredients

  • 1 sweet potato, cut into thin rounds
  • 1 tbsp avocado oil
  • ¼ tbsp salt
  • ¼ tbsp pepper
  • 4 eggs
  • 4 cups baby spinach
  • 2 tomatoes, diced
  • 2 cups cooked chickpeas
  • 2 medium carrots, grated
  • 1 zucchini, sliced
  • 1 green onion, sliced
  • ½ cup chopped walnuts
  • ¼ cup chia seeds

Lemon Garlic Dressing Ingredients

  • 1 garlic clove, minced
  • ¾ cup water
  • ½ cup lemon juice
  • ¼ cup tahini
  • 2 tbsp honey
  • ¼ tsp salt
  • ¼ tsp pepper

Directions

  1. Preheat oven to 450F and line a baking sheet with parchment paper. In a large bowl toss the sweet potato in avocado oil, ¼ tsp salt and ¼ tsp pepper. Place on the baking sheet and cook for 30 minutes, turning once. Set aside to cool.
    Bring a pot of water to boil with enough water to cover the eggs when you add them. Once it is boiling, gently lower the eggs in and boil on a gentle boil for 13 minutes. Place the eggs in a bowl of ice water and chill for 5 minutes. When the eggs are cool, remove the shell, and slice into rounds.
  2. Make the lemon garlic dressing by blending the garlic clove, water, lemon juice, tahini, honey, salt, and pepper.
  3. To assemble the salad, place everything in a large bowl and toss until evenly coated.
