Preheat oven to 350 and line a baking sheet with parchment paper.
Place everything except the chocolate chips into a food processor and blend until completely smooth. If your almond butter is dry (ie the end of the container) you may need to add almond milk to loosen up the batter.
Fold in chocolate chips.
With damp hands (it is very sticky), roll into golfball-sized balls and gently flatten onto the cookie sheet. Makes 13 cookies.
Bake for 12 minutes then let cool for 10 minutes before moving to a cooling rack.
Note: You can also skip the baking and either freeze it into cookie dough balls or enjoy as a cookie dough dip.
