Fresh Dill Salad with Crunchy Greens
I am so excited to finally share my Fresh Dill Salad with Crunchy Greens! This salad was created because I fell in love with a bagged salad kit version of this salad. I knew the dressing ingredients were not ideal and the croutons were fried in rancid oils, but it was so good and easy that I decided to overlook those downsides and enjoy the convenience of the salad kit. That is until I found a shrimp tail in my salad… I was SO grossed out that I threw the rest of the salad away and have never touched another salad kit and vowed to make my own healthy version.

Fresh Dill Salad with Crunchy Greens Recipe

Prep time: 15 minutes | Cook time: 40 minutes | Serves 4
Dill Pickle Crispy Chickpeas Ingredients
- 19 oz can chickpeas, 2 cups
- 2 tbsp oil
- 2 Tbsp fresh dill, diced
- 1/2 tsp garlic powder
- 1/2 tsp mustard powder
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 tbsp pickle juice
Fresh Dill Salad with Crunchy Greens Ingredients
- 1 head of kale, shredded
- 1 head Romaine lettuce
- 4 medium radishes, sliced, 1 cup
- ½ cucumber diced, 2 cups
- 6 dill pickles, sliced, 1 cup
- ¼ cup hemp seeds
Creamy Dill Dressing Ingredients
- ½ cup cashews, soaked overnight and rinsed
- ½ cup oil
- 2 tbsp pickle juice
- 1 tbsp lemon juice
- ¼ cup nutritional yeast
- ¼ cup fresh dill
- 2 tsp garlic powder
- Salt and pepper to taste
Directions
- To make the Dill Pickle Crispy Chickpeas: Preheat the oven to 400F and line a baking sheet with parchment paper, a silicon sheet, or grease with oil. Drain and rinse chickpeas then pat dry with a tea towel. The drier they are, the crispier they get. Toss chickpeas in oil, dill, garlic, mustard, salt and pepper. Spread out on the baking sheet and cook for 30-40 minutes, stirring every 10 minutes, until golden. Drizzle the pickle juice over the chickpeas, toss to coat and bake for another minute.
- To make the Creamy Dill Dressing: Place the drained and rinsed cashews in a food processor with oil, pickle juice, lemon juice, nutritional yeast, dill, garlic powder, salt and pepper and blend until smooth.
- To assemble the Fresh Dill Salad with Crunchy Greens: Place the kale in a large salad bowl, top with half of the dressing and massage for a few minutes to soften. Add the romaine lettuce, radishes, cucumber and dill pickles and toss to coat. Top with hemp seeds and Dill Pickle Crispy Chickpeas and enjoy.
