Spooky Meringue Ghosts

Spooky Meringue Ghosts are perfect for Halloween! They are light and crisp little treats that melt in your mouth. Spooky Meringue Ghosts only have 5 ingredients and they are gluten free, nut free and dairy free. You can still enjoy them even if it is not Halloween, just fold the raw cacao nibs into the meringue mixture instead of using them as eyes.

When experimenting with Spooky Meringue Ghosts I found they really need cream of tartar to get the shape I wanted. Cream of tartar, or potassium hydrogen tartrate, is formed using the sediment leftover in wine barrels. It is relatively natural, however, it does undergo a purification process to transform it into the white powder that is sold in stores. Cream of tartar is used in this recipe to stabilise the egg whites.

Spooky Meringue Ghosts Recipe

(gluten free, dairy free, nut free)

Prep time: 20 minutes | Cook time: 3 hours | Serving size: 24

Ingredients

Directions

  1. Line a baking sheet with parchment paper and preheat the oven to 350F.
  2. Separate the egg yolks from the whites and beat the egg whites in a large bowl until frothy.
  3. Add the cream of tartar and beat until fluffy and soft peaks start to form.
  4. Slowly add sugar 3 Tbsp at a time, beating constantly, until stiff peaks start to form.
  5. Add vanilla and continue to beat just until stiff peaks form.
  6. Pipe or swirl the mixture into 24 small meringue ghosts and place 2 raw cacao nibs on each to make eyes and one for the mouth.  If it is not Halloween, you can simple fold the raw cacao nibs into the meringues.
  7. Bake for 5 minutes. Turn off the oven and let the meringue ghosts cool and set without opening the door for about 3 hours.
  8. After three hours, remove meringue ghosts from the oven and enjoy.

You can still enjoy them even if it is not Halloween, just leave out the raw cacao nib eyes or fold them into the meringue mixture for extra crunch.

  • 2 large eggs
  • ½ tsp cream of tartar
  • 2/3 cup cane sugar, processed into a powder
  • 1 teaspoon pure vanilla extract
  • 1 cup raw cacao nibs
