Roasted Eggplant with Tahini Dressing
Roasted Eggplant with Tahini Dressing is a super simple and quick side dish that packs a huge punch of flavour. I love the texture of roasted eggplant; I like to leave the skin on so you get something that is slightly chewy with a super soft creamy center. I find eggplant has a pretty mild flavour so I love to drench it in tahini dressing.
Health benefits of Eggplant
The best way to buy eggplant is when it is ripe because it is less bitter. To know if an eggplant is ripe gently press your thumb into skin, if it bounces back it is ripe and ready to enjoy, if it remains indented then it is not ripe.

Roasted Eggplant with Tahini Dressing Recipe
(vegan, gluten free, nut free)
Prep time: 15 minutes | Cook time: 25 minutes | Serving size: 4 sides
Ingredients:
- 1 large eggplant, cut into bite sized pieces
- 2 Tbsp fresh cilantro, minced for topping
Tahini Dressing
- 1 garlic clove
- 2 Tbsp apple cider vinegar
- 2 Tbsp olive oil
- 1.5 Tbsp water
- 1 Tbsp tahini
- 1 Tbsp sesame oil
- 1/2 Tbsp cumin
- Salt and pepper to taste
Directions:
- Preheat the oven to 400F and line a baking sheet with parchment paper.
- Spread eggplant on the baking sheet and roast for 25 minutes, stirring at the 10 and 20 minute mark.
- For the tahini dressing; mince the garlic cloves or process in a food processor. Add the remaining dressing ingredients and whisk or pulse until incorporated.
- Once the eggplant is soft, remove it from the oven and top the roasted eggplant with tahini dressing and a sprinkle of fresh cilantro.

- 2 Tbsp fresh cilantro, minced for topping
- 1 garlic clove
- 2 Tbsp apple cider vinegar
- 2 Tbsp olive oil
- 1.5 Tbsp water
- 1 Tbsp tahini
- 1 Tbsp sesame oil
- 1/2 Tbsp cumin
- Salt and pepper to taste
Instructions
