Dry-Rub Chicken Wings with Roasted Cauliflower and Garlic Spinach Recipe

Serves 4 | Hands-on time: 25 minutes | Cook time: 45 minutes | Total Time: 1 hour
Ingredients
- 2½ tbsp paprika
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/4 tsp chilli powder
- 1 3/4 tsp garlic powder
- 1/2 tsp mustard powder
- 4 lb chicken wings
- 3 tbsp coconut oil, melted
- 1 head cauliflower cut into bite-sized pieces, roughly 4 cups
- 6 cups spinach
- 2 garlic cloves, minced
- 1 tbsp green onions sliced for garnish
Directions
- Preheat oven to 400F and line a baking sheet with foil and top with an oven-safe cooling rack.
- Prepare the rub by mixing together 1½ paprika, ½ tsp pepper, ¼ tsp salt, ¼ tsp chili powder, ¾ tsp garlic powder, and mustard powder in a bowl.
- Toss the wings in 1 tbsp melted coconut oil and massage the rub into the wings. Place on the cooling rack and bake for 45 minutes until cooked through.
- Toss cauliflower in 1 tbsp coconut oil, 1 tsp paprika, 1 tsp garlic powder, ¼ tsp chili powder and ¼ tsp salt. Place in the oven after the chicken has been in for 15 minutes, and bake for 30 minutes.
- Heat 1 tbsp coconut oil in a pan. Add minced garlic cloves and sauté for 30 seconds. Add spinach and sauté until just wilted, 2 minutes.
