Smoked Salmon Devilled Eggs Recipe
Gluten-free & Vegetarian
Prep time: 15 minutes | Cook time: 10 minutes | Serving size: 12 devilled eggs
Ingredients
- 6 large eggs
- ¼ cup plain organic Greek yoghurt
- 1 tbsp lemon juice
- Salt and pepper
- Smoked salmon
- Capers
- Fresh dill
Directions
- Bring a pot of water to boil with enough water to cover the eggs when you add them. Once it is boiling, gently lower the eggs in and boil on a gentle boil for 13 minutes. Place the eggs in a bowl of ice water and chill for 5 minutes.
- When the eggs are cool, remove the shell, and slice in half lengthwise. Remove the yolks, put them in a bowl, and arrange the whites on a plate cut side up.
- Mix the yolks, yogurt, lemon juice, salt and pepper until creamy and smooth. Spoon or pipe yolk mixture into egg whites and top with a rolled-up slice of smoked salmon, capers and fresh dill.
Note on hard-boiling eggs. Here are my tips to make a perfect egg that peels easily:
- Old eggs (not rotten but farm-fresh eggs don’t peel well).
- A hot start ie lowering the egg water that is already boiling.
- An ice bath after cooking.
To peel: gently roll the eggs along the countertop and start at the end where the air bubble is.
