Easter Eggie Bites quick and savoury breakfast or snack. They really aren’t just for Easter time, are the perfect breakfast for someone who is too busy in the morning to make a healthy breakfast. You can make them on the weekend and grab three or four on your way out the door. They taste great straight out of the fridge.

Easter Eggie Bites Recipe

gluten-free & vegetarian

Prep time: 15 minutes | Cook time: 30 minutes | Serves 3-4

Ingredients

  • 12 eggs
  • 1 cup almond flour
  • 1/2 cup almond milk
  • ½ tsp salt
  • ¼ tsp pepper
  • 1 cup mushrooms, finely diced
  • 1.5 cups spinach, finely diced
  • ½ cup goat cheese

Directions

  1. Preheat oven to 350F and line a muffin pan with silicone liners.
  2. In a large bowl whisk together eggs, almond flour, nut milk, salt and pepper.
  3. Add mushrooms, spinach, and cheese and stir until mixed.
  4. Pour into muffin liners and bake for 30 minutes, until the egg has set.
