Raspberry Yogurt Bark with Dark Chocolate Drizzle Recipe

gluten-free & nut-free

Prep time: 5 minutes | Chill time: 2 hours | Serving size: 8

Raspberry Yogurt Bark Ingredients

  • 1.5 cup plain Greek yogurt
  • 2 tbsp maple syrup, divided
  • 2 tbsp coconut oil, melted and divided
  • ½ pint raspberries
  • 1 tbsp chia seeds

Dark Chocolate Drizzle Ingredients

  • ¼ cup cacao powder sifted
  • 2T coconut oil, melted
  • 1T maple syrup

Directions

  1. In a small bowl, whisk together all of the yogurt, 1 tbsp maple syrup and 1 tbsp coconut oil.
  2. In a separate bowl, mash together raspberries, 1 tbsp maple syrup, chia seeds, and 1 tbsp coconut oil. You can also do this in a small blender for a smoother raspberry swirl.
  3. In a small bowl, whisk together all of the dark chocolate drizzle ingredients.
  4. Line a lasagna pan with parchment paper or wax paper. Pour the yogurt mixture into the pan and smooth with the back of a spoon. Add the raspberry filling in clumps and create a swirl using a knife or chopstick.
  5. Drizzle with dark chocolate and place in the freezer for two hours to set.
  6. Once it is firm, break it into pieces and enjoy Raspberry Yogurt Bark with Dark Chocolate Drizzle straight out of the freezer because it melts quickly.

Raspberries are a powerful food to incorporate into your diet! They have many health benefits including:

  • They’re high in protein (clocking in at 1.5g per cup)
  • They’re super hydrating with over 86% of their weight being water
  • They reduce systemic inflammation leaving you with a happy gut
  • They’re known to help reduce cardiovascular disease
  • They have a super high count of antioxidants, meaning they protect you from disease and cancer

Health Benefits of Yogurt

01. It’s a Powerful Probiotic

One of the many reasons people consume yogurt is because of its probiotic content. Probiotics help feed good gut bacteria and promote healthy digestion so that nutrients can be absorbed and we can feel our best. However, not all yogurts are alike, and many of our commercial yogurts have few probiotics left. It’s best to look for ones that are grass-fed and full fat whenever possible.

Despite that, yogurt is still excellent for digestion. The cultures help to break down lactose (which many people struggle to tolerate), even before it hits your mouth. This makes it easier to digest. yogurt also helps smooth digestive disturbances for some people by slowing the digestive process a little.

02. It Balances Blood Sugar

Although it lacks fiber, yogurt’s high protein content combined with bacterial cultures help to slow digestion and balance blood sugar. yogurt also helps to break down longer sugars in the small intestine, into shorter ones. This makes them more useful when they get to the large intestine because those short sugars can help feed the cells there. In this state, the sugars aren’t available to be absorbed into the bloodstream, preventing a sugar spike. This sets us up for a happy digestive tract and balanced blood sugar!

03. It’s An Energy Booster

Yogurt contains all of the B vitamins, making it an excellent energy booster! If you opt for full-fat yogurt, that in combination with the high protein and B vitamins will keep you feeling fuller for longer, curbing unwanted cravings or snacking.
