Peppermint Coconut Snowballs Recipe
(gluten-free, dairy-free, nut-free)
Prep time: 10 minutes | Chill time: 1 hour | Serving size 12 small balls
Ingredients
- 1 1/4 cup unsweetened shredded coconut
- 1 Tbsp white chia seeds
- 3 Tbsp honey
- 1 Tbsp melted coconut oil
- ½ tsp peppermint extract
- 1/8 tsp sea salt
- ½ cup raw cacao nibs
Directions
- Place 1 cup of shredded coconut and chia seeds in a food processor and blend until powdered.
- Add the honey, coconut oil, peppermint, and salt and process until well combined. Add remaining shredded coconut and pulse until just combined. Fold in raw cacao nibs.
- Shape into 12 (1-inch) balls with wet hands. Freeze for at least an hour to set.
- Store Peppermint Coconut Snowballs in the fridge or freezer and enjoy cold or at room temperature.
