There’s nothing like an easy, wholesome sheet pan dinner to keep cooking simple and satisfying. This Honey Mustard Sheet Pan Chicken Thighs recipe is one of my weeknight go-tos — it’s full of flavour, comes together with minimal cleanup, and celebrates real, whole food. The tangy honey mustard marinade gives the chicken a sweet-savoury glaze while crispy new potatoes and perfectly roasted broccoli make this a complete, nourishing meal the whole family will love.

Prep Time: 20 minutes | Cook Time: 35 minutes | Serves: 4

Ingredients

Honey Mustard Chicken Thighs

  • 2 cloves garlic, minced
  • 3 tbsp avocado oil
  • 3 tbsp grainy Dijon mustard
  • 1 tbsp honey
  • ½ tsp sea salt
  • ½ tsp ground black pepper
  • 8 chicken thighs

Roasted New Potatoes and Broccoli

  • 4 cups baby potatoes, quartered (about 1 lb)
  • 1 large head of broccoli, florets removed, stems peeled and chopped
  • 3 tbsp avocado oil, divided
  • 2 tbsp nutritional yeast
  • ¼ tsp salt, divided
  • ¼ tsp pepper, divided

Directions

  1. Preheat oven to 400°F.
  2. In a large bowl, mix garlic, 3 tbsp avocado oil, Dijon mustard, honey, salt, and pepper to create the honey mustard sauce.
  3. Coat the chicken thighs in the sauce and place on a lined baking sheet. Bake for 35 minutes, or until cooked through (internal temp of 165°F).
  4. Toss the potatoes in 1.5 tbsp avocado oil, ⅛ tsp salt, and ⅛ tsp pepper. Spread on a lined baking sheet and roast for 30 minutes, tossing every 10 minutes until golden.
  5. Toss broccoli with the remaining 1.5 tbsp avocado oil, nutritional yeast, ⅛ tsp salt, and ⅛ tsp pepper. Add to the chicken pan and roast for 25 minutes, until tender and slightly crispy around the edges.
