Vegan Grilled Mexican Street Corn Recipe

Serves: 6 sides | Prep Time: 10 Minutes | Cook Time: 20 Minutes
Ingredients
- 1 cup raw cashews, soaked overnight or in boiling water for 30 minutes
- ½ cup water
- ⅓ cup nutritional yeast
- 3 tbsp lime juice
- 2 tsp lime zest
- 1 garlic clove
- ¼ tsp chipotle pepper *optional
- ¼ tsp onion powder
- ¼ tsp salt
- 1 tbsp avocado oil
- 6 ears of corn, husks removed
- ½ cup cilantro chopped
- Lime wedges to serve
Directions
- Make the sauce by blending the cashews, water, nutritional yeast, lime juice, lime zest, garlic, chipotle pepper, onion powder and salt. Blend until smooth and set aside.
- Heat grill to medium. Brush corn with avocado oil and place on the grill for 20 minutes, turning every 5 minutes to cook evenly.
