Every week from July to September I buy a big basket at the farmer’s market and eat them all, usually by myself (my family aren’t peach people). But every once in a while I want to bring them in on the peach-filled fun in a way I can guarantee they’ll love, because who doesn’t love cake?

My Peach Gingerbread Upside Down Cake is the perfect balance of tart and sweet, sweetened naturally with coconut sugar and fresh peaches. Because we’re using in-season ingredients for this cake, we’re also getting so many yummy health benefits. Summer baking just got even more delightful!

Peach Gingerbread Upside Down Cake Recipe

Dairy-free | Nut-free

Prep time: 15 minutes | Cook time: 30 minutes | Serving size: 9 – 16

Ingredients

  • ½  cup + 2.5 tbsp coconut oil, melted, divided
  • 1 cup coconut sugar, divided
  • 2 peaches, sliced
  • 2 ¼ cups spelt flour
  • 1 tsp baking soda
  • ¼ tsp Himalayan rock salt
  • 2 tsp ginger
  • 2 eggs, at room temperature
  • ½ cup blackstrap molasses
  • ½ cup oat milk
  • ½  tsp vanilla

Directions

  1. Preheat oven to 350F.
  2. Pour 2.5 tbsp coconut oil into an ungreased 10-inch. round baking pan. 
  3. Sprinkle with ½ cup coconut sugar and arrange peach slices in a single layer over sugar.
  4. Mix flour, ½ cup sugar, baking soda, salt, and ginger together in a large bowl.
  5. In a small bowl mix eggs, molasses, ½ cup melted coconut oil, oat milk and vanilla.
  6. Add the wet mixture to the dry mixture and mix until incorporated.
  7. Spoon mixture over the peaches and bake for 30 minutes or until a toothpick inserted in the centre comes out clean.
  8. Cool for 10 minutes before inverting onto a serving plate. 

NOTE: This tastes awesome when served warm with a dollop of whipped cream or a la mode.
