I think it’s because I’m a bit of a lazy baker (shhhh!) Sometimes you just want a little sweet without the hassle of baking a cake.

02. Creamsicle Coconut Truffles

Creamsicle Coconut Truffles are a creamy and sweet dessert that will have you going back for more. They are a perfect combo of vanilla and orange creamy goodness. If you were ever a fan of Creamsicle ice cream bars as a kid (or as an adult!), then you will love my Creamsicle Coconut Truffles.

03. Raw Blueberry Cheesecake

I love making raw cheesecakes in the summer and this Raw Blueberry Cheesecake is one of my favourites. It is made with a chewy gluten-free date and pecan base that is topped with creamy vegan blueberry cashew cream cheese that tastes just like the real thing. Raw Blueberry Cheesecake gets all of its sweetness from the dates, blueberries and a pinch of stevia making it sugar-free and bursting with fiber and antioxidants.

04. Raw Black Forest Brownies

Raw Black Forest Brownies are a decadent chocolate cherry dessert that is gluten-free, paleo and raw vegan. They are naturally sweetened with dates and cherries which creates a smooth and rich brownie filled with crunchy almonds and chewy cherries for added texture.

If you are looking for a decadent protein-packed treat these Vanilla Almond Protein Truffles are for you. They are delicious in a coat your mouth with rich chocolate almond buttery goodness kind of way. Banana ice cream is so popular right now because it is super easy to make and it is delicious. You won’t believe it’s not ice cream! I like to get creative and play around with the toppings. My favourite is homemade chocolate sauce and pecans but I also like to add fresh berries and trail mix. This ice cream is such a great base for whatever you are craving.

Let’s talk about sugar alternatives

Not only are these no-bake dessert recipes, but they are also low in white sugar. It’s only when you really start paying attention to food packages that you realize just how often sugar makes the top two ingredients. These recipes show you how simple it can be to still make amazing desserts using natural, unfeigned sugar alternatives. We have to be able to enjoy the sweet things in life without feeling inflamed and crummy.

Coconut sugar

Coconut sugar (pictured below) is not made from coconuts but from the sap of the blossoms of the coconut palm tree. The sap is collected and then boiled to evaporate the water content, leaving a sugar that looks a little like raw or light brown sugar. Coconut sugar also contains iron, zinc, and calcium, which can have many health benefits, including stronger bones.

Maple syrup

Maple syrup is made from the concentrated sap of the maple tree, whereas maple-flavoured syrups are usually just pressed glucose syrup with added flavour. Real maple syrup is much more flavourful and contains significant amounts of nutrients and antioxidants.

Honey

Honey is one of the most natural sweeteners you can use and since honey bees make honey using the nectar from flowers the local flora makes an impact on the flavour of the honey. The carbs in honey are prebiotics, which serves as fuel for the “good” bacteria in your gut.
