Candy Cane Spelt Cookies

Candy Cane Spelt Cookies are soft and buttery with a festive candy cane crunch.

I have been making these candy cane spelt cookies for years. I’m not sure why I waited so long to share them with you!

Actually, I know why.

They aren’t the healthiest cookies around, BUT it is the holiday season, so it is time to indulge responsibly.

Candy Cane Spelt cookies are made with coconut suga,r which has almost half the glycemic index of regular sugar. This means these won’t affect your blood sugar levels quite the same way as regular cookies.

They are also made with spelt flour which gives them a nutty sweet flavour. I love baking with spelt flour because it has more protein and minerals than regular whole wheat flours.

Candy Cane Spelt Cookies

(nut-free)

Prep time: 10 minutes | Inactive prep time: 2 hours | Cook time: 13-15 minutes | Serving size: 1 ½ dozen

Ingredients:

  • 1/3 cup coconut sugar
  • 1/3 cup powdered sugar (I put coconut sugar in a blender)
  • 1/2 cup butter, softened
  • 1/4 cup coconut oil
  • 1/2 Tbsp milk alternative
  • 1 egg
  • 2 1/4 cup spelt flour
  • 1/4 tsp baking soda
  • 1/4 tsp cream of tarter
  • 1/8 tsp salt
  • 1/2 cup crushed candy canes (5 full-size candy canes)

Directions:

  1. Combine coconut sugar, powdered sugar, butter, coconut oil, milk alternative, and egg in a bowl and mix until smooth.
  2. Slowly add the flour, baking soda, cream of tarter, and salt and stir until mixed. Add the crushed candy cane and stir until incorporated.
  3. Shape the candy cane spelt cookie dough into a 2-inch diameter log and wrap in waxed paper. Chill in the fridge for 2 hours.
  4. Pre-heat the oven to 350F.
  5. Slice the log into 1cm thick pieces and place on a cookie sheet lined with parchment paper.
  6. Bake for 13-15 minutes until the cookie edges are golden.
  7. Cool candy cane spelt cookies on a wire rack and enjoy as a tasty holiday treat!

NOTE: To crush the candy canes, I leave them in their package and knock them with a rolling pin. This way the pieces stay together until you unwrap them.
