Sweet Potato Sausage Breakfast Bake Recipe

Gluten & Dairy Free

Prep time: 20 minutes | Cook time: 50 minutes | Serves 4-6

Ingredients:

  • 0.7 lb breakfast sausages
  • 1 small yellow onion, diced
  • 1 large sweet potato, grated (about 3 cups)
  • 4 oz baby spinach
  • 4 garlic cloves, minced
  • 10 eggs
  • ½ tsp dried sage
  • ½ tsp dried thyme
  • ½ tsp dried rosemary
  • ¼ tsp salt
  • ¼ tsp pepper
  • ¾ tsp cinnamon 

Directions

  1. Preheat your oven to 350°F and grease a 9×13 baking dish (or line it with parchment for easy cleanup).
  2. In a skillet over medium heat, cook the breakfast sausages until browned. Let them cool slightly, then slice into bite-sized pieces.
  3. In the same pan, add the diced onion and sauté until it turns translucent. Stir in the grated sweet potato and garlic, and cook for about 5 minutes until softened and fragrant.
  4. Toss in the baby spinach and cook just until wilted, 2 minutes. Remove from the heat.
  5. In a large mixing bowl, whisk together the eggs, sage, thyme, rosemary, salt, pepper, and cinnamon.
  6. Stir in the sausage and veggie mixture until everything is well combined.
  7. Pour into your prepared baking dish and smooth out the top.
  8. Bake uncovered for 50 minutes, or until the eggs are fully set and the top is golden.
  9. Allow to cool for at least 10 minutes before slicing. Serve warm and enjoy a hearty, balanced start to your day!
