Sweet Potato Fries

Sweet Potato Fries are a healthy alternative to deep fried french fries. These sweet potato fries are spiced with salt, pepper, paprika, chili powder, cinnamon, garlic and coconut oil to deliver a punch of flavor. I created a creamy curry sauce to go with my sweet potato fries, because who doesn’t like to dunk their sweet potato fries?!

Health Benefits of Sweet Potatoes

Sweet potatoes are an excellent source of beta-carotene, an antioxidant that converts to vitamin A in the body. If your sweet potatoes are organic you can leave the skin on because the skin is a great source of fiber. If not, get peeling!

Sweet Potato Fries with Curry Dipping Sauce

(gluten free, nut free, vegetarian)

Prep time: 15 minutes

Cook time: 20-30 minutes

Serving Size: 4 sides

Ingredients:

  • 2 large sweet potatoes, cut into sticks
  • 1/2 tsp salt
  • 1 tsp pepper
  • 1/4 tsp paprika
  • 1/2 tsp chili powder
  • 1/4 tsp cinnamon
  • 2 garlic cloves, minced
  • 1/2 cup coconut oil, melted
  • 1 cup organic Greek yogurt
  • 2 tsp lime juice
  • 1/2 Tbsp curry powder

Directions:

  1. Preheat oven to 425F.
  2. Toss sweet potatoes, salt, pepper, paprika, chili powder, cinnamon, garlic and coconut oil in a large bowl.
  3. Spread coated sweet potatoes on a baking sheet and bake for 20-30 minutes or until potatoes are tender, stirring every 5 minutes.
  4. While the sweet potato fries are baking, combine Greek yogurt, lime juice and curry powder in a bowl and stir until mixed.

    Delicious! This is a great-tasting, yet healthy take on sweet potato fries. I especially liked the curry sauce. Finding coconut oil was a bit of a challenge, but I finally located it in the Organic section of Loblaw’s. Definitely a keeper.
