Sushi might feel like a delicacy reserved for takeout or fancy nights out, but making your own at home is easier than you think! This homemade salmon sushi recipe allows you to craft fresh, vibrant rolls that are as delicious as they are wholesome. Homemade Salmon Sushi Recipe

Preparation: 45 mins | Cook Time: 30 mins | Serving: 2-4

Ingredients

  • 1 package of Nori sheets
  • 2 cups toasted sesame seeds 

Sushi Rice

  • 2.5 cups of sushi rice 
  • 4 tbsp rice wine vinegar 
  • 1 tbsp sugar 
  • ½ tsp salt

Salmon

  • 1 pound skinless salmon fillet 
  • 3 tbsp tamari or soya sauce 
  • 2 tbsp sesame oil 

Filling

  • 2 tbsp mayo 
  • ½ seedless cucumber cut into very thin matchsticks 
  • 2 small carrots, peeled and cut into thin matchsticks 
  • 1 avocado, thinly sliced 
  • 3 green onions, thinly sliced

Directions

  1. Preheat oven to 400F. 
  2. Cook sushi rice as directed on the package. 
  3. In a small bowl, whisk together tamari and sesame oil and add salmon. Set aside and marinate for 10 minutes. 
  4. Bake salmon for 12-15 minutes until cooked through. Let cool for 10 minutes and slice into thin strips. Heat vinegar, sugar and salt in a small bowl and stir until the sugar is dissolved. Place in the refrigerator to chill. 
  5. When the rice is cooked, spread it out on a cookie sheet and let it cool for 10 minutes. Sprinkle the cooled vinegar mixture over the rice. Using two knives cut the liquid into rice. 
  6. To assemble the homemade salmon sushi: 
  7. Place a sheet of nori on the bamboo mat shiny side down.
  8. Spread a thin layer of rice on the nori and sprinkle with toasted sesame seeds.
  9. Spread a small amount of mayo along the horizontal edge of the roll and add salmon strips, cucumber, carrots, avocado and green onion. 
  10. Using the mat, roll the sushi into a tight cylinder. 
  11. Remove from the mat and cut into 1-inch pieces with a very sharp knife. 
  12. Serve with tamari or soya sauce, wasabi and pickled ginger to cleanse the pallet between pieces
