I am so excited about my Eggnog Cinnamon Rolls! I don’t think I’ve ever met someone who doesn’t love a cinnamon roll… especially when it comes with a festive Christmas twist! Every December, these Eggnog Cinnamon Rolls make their way into my kitchen, and without fail, they disappear faster than I can bake them. My whole family would happily eat them for breakfast, lunch, dinner and dessert if we could get away with it. They are soft, cozy, perfectly spiced and filled with that holiday nostalgic flavour. These rolls aren’t just another Christmas morning recipe; they are a certified kid pleaser and a tradition we look forward to all season long!

Eggnog Cinnamon Rolls Recipe

Yeast-Free | Dairy-free

Prep time: 25 minutes | Cook time: 15 minutes | Serving size: 9

Eggnog Cinnamon Rolls Ingredients

  • ¼ cup nut milk at room temperature
  • ¾ cup coconut oil, divided
  • 1 egg, at room temperature
  • ½ tsp vanilla extract
  • ¾ cup coconut sugar, divided
  • 2¾ cups spelt flour, divided
  • 2 tsp baking powder
  • 1½ tbsp nutmeg
  • ½ tsp cinnamon
  • ½ tsp cardamom
  • ½ tsp cloves

Vanilla Maple Glaze Ingredients

  • ½ cup icing sugar (process 1/3 cup coconut sugar)
  • ½ tbsp maple syrup
  • ½ tbsp nut milk
  • ⅛ tsp vanilla powder or extract

Directions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Whisk the nut milk, ½ cup coconut oil, egg, and vanilla in a medium-sized bowl.
  3. Mix ¼ cup coconut sugar, 2½ cups spelt flour and baking powder in a large bowl.
  4. Add wet ingredients to the dry ingredients and mix until everything is incorporated, and rest for 5 to 20 minutes in the fridge until firm.
  5. Whisk together ¼ cup melted coconut oil, ½ cup coconut sugar and cinnamon, nutmeg, cardamom and cloves.
  6. Roll the dough into a rectangle that is roughly 1cm thick. Use the remaining ¼ cup of flour to prevent the dough from sticking to the surface or rolling pin.
  7. Spread the cinnamon sugar mixture over the dough using the back of a spoon.
  8. Roll the dough up and cut it into slices using a serrated knife, or wrap unflavored dental floss around the roll and pull it tight to cut the dough.
  9. Arrange the eggnog cinnamon rolls on the baking sheet so they do not touch and bake for 15 minutes.
  10. While the spelt cinnamon rolls are baking, prepare the glaze by mixing the icing sugar with maple syrup, nut milk and vanilla. Once the eggnog cinnamon rolls have cooled, drizzle them with the glaze, sprinkle with nutmeg and enjoy.

Why Use Spelt Flour Instead of Regular Flour?

Most of the popular baked goods we know and love use regular, all-purpose white flour. While this is okay once in a while, eating excess amounts of white, processed flour can cause some damage. I chose to use spelt flour in these Eggnog Cinnamon Rolls as it is an amazing substitute to keep that texture, but with some added health benefits

  • Nutrient Dense: Spelt flour contains more protein, fibre, vitamins and minerals compared to regular flour. Specifically, it is rich in B vitamins, iron, selenium, magnesium and zinc. 
  • Smoothier Digestion: Most people find spelt flour easier on the stomach due to a weaker gluten structure. 
  • Less Processed: Spelt flour is considered to be an ‘ancient grain’, and is typically grown with fewer modifications and is less processed. 
  • Great Texture and Flavour: Spelt flour has a nutty and sweet flavour to it, adding some extra holiday flavour to those cinnamon rolls. It has a soft and tender texture but still maintains structure. 

TIP: When using flour for any recipe, try to find an organic option. Wheat and other grains can be highly sprayed with pesticides, so it’s best to go for an organic brand just to be safe.
