Prep time: 15 minutes | Cook time: 20–25 minutes | Makes: 12 muffins

Ingredients

  • 3 cups almond flour
  • ¼ cup coconut sugar
  • 1 tsp baking soda
  • ¼ tsp ground cinnamon
  • ¼ cup melted coconut oil, room temperature
  • 3 large eggs, at room temperature
  • ½ cup maple syrup, at room temperature
  • ½ tsp almond extract
  • ½ tsp vanilla extract
  • 2 cups fresh cherries, pitted and chopped
  • ½ cup raw almonds, chopped

Directions

  1. Preheat your oven to 350°F (175°C) and line a muffin tray with 12 paper liners.
  2. In a large bowl, whisk together almond flour, coconut sugar, baking soda, and cinnamon.
  3. In a separate bowl, mix the melted coconut oil, eggs, maple syrup, almond extract, and vanilla extract.
  4. Pour the wet mixture into the dry mixture and stir until well combined.
  5. Gently fold in the chopped cherries.
  6. Spoon the batter evenly into the prepared muffin liners. Sprinkle chopped almonds on top.
  7. Bake for 20–25 minutes, or until a toothpick inserted into the centre of a muffin comes out clean.
  8. Let cool on a wire rack and enjoy!
