Healthy Camping Recipes: Camp Cookout Challenge on Breakfast Television
I’m thrilled to be sharing my healthy camping recipes on Breakfast Television on May 12, 2026. There’s something so fun about cooking outdoors. Whether you’re camping with your family, heading out for a weekend getaway, or just enjoying a summer evening by the fire, meals always seem to taste better outside.
When most people think of camping food, they picture hot dogs, chips, and s’mores. And while those can be part of the experience, they don’t always leave you feeling your best. You can easily make fresh, balanced meals at your campsite without a lot of extra work. The secret is doing a bit of prep at home so everything comes together quickly when you’re outside.

Healthy Camping Recipes
These healthy camping recipes are designed to be simple, nourishing, and practical for car camping. I’ll admit that they aren’t great for portaging or backcountry camping because you need a good quality cooler to keep the salmon cold.
They use whole, recognizable ingredients and provide a balance of protein, healthy fats, and fibre to help keep your energy steady throughout the day. With just a little prep at home, you can avoid the stress of cooking at the campsite and actually enjoy the experience.

BBQ Salmon with Grilled Corn Salsa
This is a great healthy camping recipe because it’s fresh, flavourful, and comes together quickly on a BBQ or campfire grill. It’s packed with protein, healthy fats, and fibre to keep your energy up while you’re enjoying the outdoors.
Ingredients
BBQ Salmon
- 4 salmon filets, skin on
- 1 tbsp avocado oil
- 1 tsp chili powder
- ½ tsp cumin
- ½ tsp sea salt
- ½ tsp ground black pepper
- ¼ tsp garlic powder
- ¼ tsp dried oregano
Grilled Corn Salsa
- 2 ears of corn
- 1 tbsp avocado oil
- 2 cups cherry tomatoes, quartered
- ¼ red onion, finely diced
- 1/3 cup fresh cilantro, chopped
- 1 garlic clove, minced
- ¼ cup lime juice (about 2 limes)
- Sea salt and pepper to taste
At Home Prep
- Mix the spice blend (chili powder, cumin, sea salt, black pepper, garlic powder, oregano) and store in a small container.
- Chop the cherry tomatoes, dice the red onion, chop the cilantro, and mince the garlic. Store together in one container.
- Keep the limes whole so you can squeeze them fresh at the campsite.
- Portion the salmon filets and store in a sealed container.
- Pack avocado oil and whole ears of corn.
Directions (At the Campsite)
- Preheat your BBQ or campfire grill to medium heat.
- Brush the corn with avocado oil and grill, turning occasionally, for about 10 minutes until lightly charred.
- Brush the salmon with avocado oil and sprinkle with the spice blend.
- Grill the salmon skin side down for about 4 to 5 minutes per side, until it flakes easily with a fork and is cooked through.
- Cut the corn off the cob and add it to your pre-prepped tomato mixture.
- Squeeze fresh lime juice over the salsa and mix well.
- Spoon the grilled corn salsa over the salmon and serve.

Campfire Baked Apple Crumble
This is a healthier twist on a classic campfire dessert. It’s warm, comforting, and naturally sweetened, making it the perfect way to end a day outdoors.
Ingredients
- 4 apples
- 1 cup oats
- ½ cup chopped raw pecans
- ¼ cup oat flour
- ¼ cup coconut oil, softened
- 3 tbsp maple syrup
- 1 tsp cinnamon
- ½ tsp vanilla
At Home Prep
- Mix the oat crumble filling by combining oats, chopped pecans, oat flour, coconut oil, maple syrup, cinnamon, and vanilla.
- Store the crumble mixture in a container.
- Wash and core the apples, and squeeze a bit of lemon juice on the apples so they don’t brown.
- Pack foil sheets for wrapping.
Directions (At the Campsite)
- Core the apples if not already done at home.
- Stuff each apple with the oat crumble mixture.
- Wrap each apple in foil.
- Place the wrapped apples directly into the campfire coals or on a grill over the fire.
- Cook for 15 to 20 minutes, until the apples are soft and the filling is warm.
- Carefully unwrap and enjoy.
