I’m thrilled to share with you my fall cooking classes and lunch & learn! As the heat dies down and days start to feel a little shorter, it’s impossible to ignore the fact that fall is in the air. Although I do truly love summer, I like to welcome this season with open arms because there are so many wonderful things that come with fall! Cozy sweaters, warm soups, and early evenings filled with self-care. Fall feels like a time to finally give ourselves permission to slow down a little and just enjoy simple pleasures.
But what do we do when we want to slow down but everything seems like it’s just ramping up again? Work deadlines, Q4 looming, back to school, hockey games, prepping the house for winter, dry skin, coats and boots, who has time to deal with any of it, let alone find time to prep and eat healthy meals?

Fall Cooking Class 1: Must Make Apple Recipes
Nothing says fall like delicious, round, perfectly sweet and in-season apples! In this Must Make Apple Recipes Cooking Class, I’ll be teaching you step by step how to make my Healthy Apple Crumble to satisfy any autumn sweet tooth. This cooking class is also a little different because you’ll get to choose your second recipe. Pick either savory and sensible, or sweet and sumptuous. We’ll be making either my Cranberry Apple Kale Slaw (photo below) to help you meet your daily dose of greens, OR my Apple Cider Cocktail/Mocktail – because who doesn’t love happy hour! Either way, you choose, you’ll be reaping the benefits of these delectable and nutritious fall fruits!

Apples have so many nutritional qualities! They’re filled with water, fiber, and pectin to support digestion and feed good gut bacteria. They contain 1 gram of protein per serving, and they’re loaded with health-promoting vitamins and minerals! Apples contain vitamin C which helps support the immune system, the skin, connective tissue, and more. They also contain loads of antioxidant and anti-inflammatory flavonoids to prevent disease and keep you feeling your best! “An apple a day keeps the doctor away” isn’t just a saying, it’s science!
Fall Cooking Class 2: Embrace the Corn Harvest
Corn is a fall staple in my book! These starchy yellow vegetables are super satisfying this time of year. In my Embrace the Corn Harvest Fall Cooking Class, we’ll be doing just that! I’ll be teaching you how to make two different recipes where corn is the star of the show! I’ll show you step by step how to make my Fresh Corn Salsa. We’ll also make my Coconut Curry Corn Soup (photo below) for a creamy dish to add to your menu for cozy nights in!
Fact or fiction: Is corn a health food?
FACT! Corn is an awesome food with lots of overlooked health benefits. Firstly, corn contains fiber and water (especially if it’s steamed or boiled). These are essential for good digestion and good health. According to a 2017 national consumption survey, 95% of the US population does not consume enough fiber to maintain good health. Inadequate fiber intake has been associated with an increased risk of type two diabetes, obesity, cardiovascular disease, and cancers. This gluten-free, high-protein carb is an excellent way to help fill the fiber gap that so many of us might be experiencing!
Corn is also a great source of carotenoids. Carotenoids are a group of antioxidants that help to protect the body from free radicals! There’s a reason why corn has been a staple food for indigenous cultures for thousands of years. And although our industrialized corn might have a slightly less dense nutritional profile, it’s still a worthy health food in my book!
