These Stuffed Apples with Oatmeal Crumble are essentially a camping-inspired apple crumble tucked right inside the apple itself. They have all the flavours of a classic crisp, warm cinnamon, crunchy oats, and soft baked apples, but with simple ingredients and natural sweetness.

If you’re heading out camping, you can do most of the prep at home, making them incredibly easy to put together at the campsite. They’re the perfect way to end a day outdoors, and if you happen to have a cooler that can keep ice cream frozen, they’re even better served à la mode.

Stuffed Apples with Oatmeal Crumble Recipe

Ingredients

  • 4 apples
  • 1 cup oats
  • ½ cup chopped raw pecans
  • ¼ cup oat flour
  • ¼ cup coconut oil, softened
  • 3 tbsp maple syrup
  • 1 tsp cinnamon
  • ½ tsp vanilla

At Home Prep

One of the things I love most about this recipe is how easy it is to prepare ahead of time.

  1. Combine the oats, chopped pecans, oat flour, coconut oil, maple syrup, cinnamon, and vanilla to make the crumble filling. Store the mixture in a sealed container.
  2. Wash the apples before packing them up. Don’t forget to bring along foil sheets for wrapping.

Having everything prepared ahead of time means all that’s left to do at the campsite is assemble and cook, which makes this recipe especially fun when you’re cooking with kids or feeding a group.

Directions (At the Campsite)

  1. Stuff each apple with the oat crumble mixture. This is a great job for little helpers and part of what makes the recipe so enjoyable.
  2. Wrap each apple in foil and place it directly into the campfire coals or on a grill over the fire.
  3. Cook for 15 to 20 minutes, or until the apples are soft and the filling is warm. 
  4. Carefully unwrap and enjoy while they’re still warm.

  1. Preheat your oven to 375°F.
  2. Core the apples and place them in a small baking dish.
  3. Stuff each apple with the oat crumble mixture, and cover the dish with foil.
  4. Bake for 30 to 45 minutes, or until the apples are soft when pierced with a fork.
  5. Serve warm on their own or with a scoop of vanilla ice cream for an extra special dessert.
