Coconut Curry Popcorn

Stovetop Coconut Curry Popcorn is a fun way to spice up your popcorn. It is cooked in coconut oil which gives it a sweetness that complements the spicy curry really well. This is the perfect popcorn to make before snuggling up with your favorite movie. Not all curries are created equal, so you can play around with using a mild curry for a sweeter treat or a spicy curry for something with a kick.

Curry

I love using curry in my recipes because it adds a loud punch of flavor. Curry powder is a spice mix that usually contains varying amounts of turmeric, coriander, cumin and cayenne pepper. Many blends also include a combination of ginger, garlic, fennel seed, caraway, cinnamon, clove, mustard seed, cardamom, nutmeg or black pepper. Turmeric, which is the ingredient that gives curry its beautiful golden color, is full of antioxidants and has numerous health benefits. For the best results and the most fragrant curry, you want to grind your own spice blend. To save time making Coconut Curry Popcorn, I used Swanson’s Organic Curry Powder which has a delicious taste with the perfect balance of spicy and sweet.

As I was getting ready to take the pictures for my coconut curry popcorn recipe; I discovered that my air popper was broken. I thought about running out to buy a new one, but I realized that this was an excellent opportunity for me to try making coconut curry popcorn on the stovetop. I was a little scared of this stovetop method but decide I was up for the challenge! I found the coconut curry popcorn ended up a little smaller than it usually does in the air popper which was interesting. I should also mention that I buy organic popcorn kernels because I like to avoid genetically modified organisms (GMOs), check out my Cheesy Popcorn recipe for more information on GMOs.

Stovetop Coconut Curry Popcorn

(vegan, gluten free)

Prep time: 1 minute

Cook time: 3 minutes

Serving size: 1-2

Ingredients:

  • ¼ cup un-popped organic popcorn kernels
  • 1.5 Tbsp coconut oil
  • 1/8 tsp sea salt
  • 3/4 tsp curry powder

Directions:

  1. Pour coconut oil into a large heavy bottomed pot with a lid and heat to medium high heat.
  2. Add three popcorn kernels and cover with the lid slightly ajar.
  3. When the kernels start to pop, add the remaining popcorn kernels spread them out so they are in a single layer.
  4. Put the lid back on the pot slightly ajar and gently shake the pot to prevent the popcorn from burning.
  5. Once the popping slows down and most of the popcorn has popped, turn off the heat and shake for a couple more seconds to pop any stragglers.
  6. Remove the lid and sprinkle with the sea salt and give it a shake.
  7. Transfer to a large bowl, add the curry powder and toss until coated. It is important not to add the curry powder to the popcorn while it is still in the pot because it can cause the curry powder to burn.

Note: You can also use an air popper to make coconut curry popcorn. Simply place the popped popcorn, melted coconut oil, salt and curry in a large bag or bowl with a lid and shake it up.

    I use coconut oil all the time to make stovetop popcorn. I sprinkle the curry powder on at the table so I can control the amount on my serving. Also, I eat it with a soup spoon so my fingers are not stained yellow.

      That is a great method Beverly. Eating it with a spoon is a great idea, I always end up with bright yellow fingers!
